ROASTED RED POTATOES



Ingredients
4 Medium red potatoes, washed
4 tbsp. Olive oil
1 tbsp. Prepared brown mustard
1 tbsp. Kosher salt
1 tsp. Ground black pepper
1 tsp. Dried rosemary
1 tsp. Dried thyme

Directions
    • Preheat oven to 425.
    • Wash potatoes and pat dry with paper towels.
    • Quarter potatoes lengthwise.
    • In large bowl, combine with whisk olive oil, mustard, salt, pepper, rosemary and thyme.  Whisk until well combined.
    • Add potatoes to bowl and toss until well-coated.
    • Place on cookie sheet, and bake 45-60 minutes, until browned and crispy.  Leftover dressing may be drizzled on top prior to baking.
    • Potatoes may also be placed in a roaster pan with roast pork, beef or poultry, and roasted alongside for the length of roasting period of the meat, provided there is moisture in the bottom of the pan.
    • Adjust seasoning if necessary and serve hot.
