PARMESAN AND GARLIC
MASHED CAULIFLOWER



Ingredients
1 head Fresh cauliflower
1/4 c. Cold, fresh water
2 cloves Garlic, smash-peeled
1/3-1/2 c. Chicken (or vegetable) stock
2 tbsp. Unsalted butter
1 tbsp. Greek yogurt, plain
1/3 c. Grated Parmesan cheese
Kosher salt
Ground black pepper
(a pinch Pepperoncino)
1-1/2 tbsp. Chopped chives

Directions
    • Trim the cauliflower of all leaves, then cut into about 1” florets.
    • Place cauliflower, garlic and water in a glass or ceramic microwave-safe bowl.  Cover tightly with plastic wrap.
    • Microwave on high for 3-5 minutes, until fork tender.
    • Remove from microwave, uncover, and drain in colander.  Let stand until dry (no longer steaming).
    • Place in the bowl of a food processor fitted with the “S” blade.i
    • Add the stock, butter, yogurt, and a healthy pinch each of the salt and pepper.  (Also, add the pepporoncino, if using.)
    • Pulse to combine, until the preferred consistency of mashed potatoes.ii
    • Return the mixture to the microwave-safe bowl, cover with plastic wrap, and reheat in the microwave on high 30-60 seconds, ‘til steaming.
    • Uncover, sprinkle with the cheese and chives, and serve hot.

This is a great Autumn dish, when cauliflower is in season in the U. S.  It works with frozen cauliflower, too,  but not nearly as well.  It is a happy collision on Southern and Italian flavors!
