PESTO CHEESE BREAD
Pane al pesto e formaggio
Ingredients
8 slices Italian bread (any good, crusty bread)
4 tbsp. Basil pesto (or other herb pesto), preferably homemade
1 c. Mozzarella cheese, shredded
1/2 c. Parmesan cheese, freshly grated
Kosher salt
AND
Ground black pepper, to taste
Directions
• Preheat broiler to 450F+
• On a foil-lined, rimmed baking sheet, arrange the eight slices of bread.
• Spread 1/2 tbsp. of the pesto evenly on each piece.
• Evenly sprinkle 1 tablespoon of the grated Parmesan over each piece.
• Evenly sprinkle 2 tablespoons of the shredded Mozzarella over each piece.
• Slide under the broiler, for about 4-5 minutes, until the mozzarella is browned and bubbly.
• Transfer to a serving platter, adjust the seasoning with salt and pepper as needed, and serve hot or at room temperature.
Just a little tweak to standard garlic cheese bread. While great on its own as an appetizer, it is most at home on a plate loaded with spaghetti and meatballs.
