Game Day Favourites: CHILI CON CARNE

CHILI CON CARNE



Ingredients
1 lb. Ground beef (85% lean)
14.5 oz. can Dark red kidney beans (or black beans)
14.5 oz. can Light red kidney beans (or cannellini beans)
10.75 oz. can Condensed tomato soup
14.5 oz. can Diced tomatoes
1 small jar Salsa (medium)
1 rib Celery, chopped
2 Shallots, chopped
6 tbsp. Chili powder (more if desired)
1 tsp. Red pepper flakes
1 tbsp. Garlic powder
1 tsp. Fresh ground black pepper
3 dashes Frank's Original Hot Sauce
1 square Dark chocolate (about 1" square)

Directions
    • Brown ground beef and drain fat.
    • While beef is browning, dilute tomato soup with one can water.
    • Drain and rinse beans.
    • Place soup, rinsed beans, and other canned ingredients  (and salsa) in crock pot.  Turn heat to low.
    • Add chili powder, red pepper flakes, garlic, black pepper, chocolate and stir.
    • Add beef, celery and shallots.
    • Cook low 'n slow for at least 3 hours.
    • Serve with crackers or Corn Bread, and optional grated cheese and sliced green onions.

This is a slight twist on my mom's chili, one of the several things she  made that was excellent.  It's a little unusual, for sure, but it is really flavorful and has great texture.
