EASY JELLY DONUTS
Ingredients
One 7.5 oz. Roll refrigerated biscuit dough (usually 10 per package)
1 c. Jelly, any flavor
1 c. Granulated or confectioner’s (icing) sugar
48 oz. Vegetable oil
Directions
• In a large saucepan, heat the oil to 325F (until a drop of water pops).
• Separate each piece of the biscuit dough, and roll them flat to about 1/4” thickness.
• Fry two at a time in the hot oil for 3-4 minutes, until golden brown.
• Remove with a spider scoop.
• Drain on paper towels.
• Fill a pastry bag, equipped with a #12 tip.
• Insert the tip into each donut, and squeeze to fill.
• Place the sugar in a shallow dish, and lightly press each donut into the sugar on both sides to adhere.
Jelly donuts are a traditional Hanukkah treat, but – let’s face it – they’re great any time! I’m a bit lazy when it comes to making yeast dough, and this easy recipe I actually learned as a kid.
